I've been watching a lot of anime this past month or two... Claymore, Welcome to the NHK!, The Melancholy of Haruhi Suzumiya and finishing up Lucky Star (it was recommended after watching The Melancholy of Haruhi Suzumiya)... Also, finally finished GTO. The most enjoyable one would probably be Welcome to the NHK!, though they all are pretty good.
A quick rundown of each though, if people are interested to read...
Claymore - about a mysterious group of women called Claymores (centered around one called Clare), who basically go around hunting demons called Yoma who disguise themselves amongst humans. Only they can detect the Yoma because they have gone through a process in which they become half Yoma themselves... but that can have its own repercussions.
Pros - the animation is great, gory (if you like that - limbs flying off, etc.), pretty simple but interesting story, fairly good character development
Cons - the ending seems like it doesn't really resolve anything (unless there will be a second season), one character is extremely annoying, and sometimes it's hard to differentiate among the Claymore, since they all look fairly similar.
Welcome to the NHK! - about a guy named Satou who is a 'hikikomori', someone who pretty much shuts themselves out from the world; a hermit if you will. One day a girl named Misaki comes to his doorway claiming she can help cure him of his hikikomori ways... along the way he goes through many different feelings and experiences.
Pros - great story, great characters/character development, animation is good for the most part, and the series can be both very funny and very sad. A nice, resolved ending.
Cons - nothing really seems to come to mind for this, although it seems for a couple episodes the animators/illustrators got real lazy (but it doesn't really distract you much).
The Melancholy of Haruhi Suzumiya - about a high school girl named Haruhi who seems a little quirky and straightforward. Unknowing to her she seems to have the ability to alter reality in a way... She collects a bunch of interesting characters around her as she forms a school club (SOS Brigade), including the narrator Kyon (who himself is skeptical of why he seems to constantly hang around with such a character...). Eh, kind of hard to explain.;;
Pros - great story, great animation, all the characters are pretty likable, funny, another anime with a nice resolved ending
Cons - nothing really comes to mind for this one either... although one thing is the episodes are not in chronological order which makes things a little confusing at times. Also, some of the episodes seem really far off from the main story but that's not to say they aren't enjoyable; all the episodes are fun/interesting to watch. Apparently they're taken from various parts of the manga but I've never read it, so I can't really comment on that.
GTO: Great Teacher Onizuka - about a young ex-bike gang member, Eikichi Onizuka, who decides to become the greatest teacher ever... although his motives at the beginning for going into teaching aren't the most moral (high school girls, lol). However, he seems to get put in charge of all the trouble classes... along the way he delves into many of the students' lives, meets interesting people, and helps them out as best as he (and his duty as a teacher) can.
Pros - probably my favorite lead character of these 5 anime, each of the little story bits for each student or character are for the most part interesting, the messages and morals of each little part are pretty good, very funny
Cons - the ending seems reeeaaallly rushed... that's all I'll say. Apparently the manga goes a different direction and goes further, so I'll probably have to look into that.
Lucky Star (haven't finished, but I'll give my input so far) - I really don't how to explain what it is about. It's centered around 4 high school girls (Konata being the main one), and the show is really about nothing in particular... it's like a lot of little jokes put together into an anime.
Pros - funny, characters are all pretty dynamic and interesting in their own way
Cons - doesn't really seem to be any particular direction it's going... but each episode is still enjoyable to watch.
I'll come back and change this if my opinion changes when I finish it up.
Other good animes I've seen (but not recently) are Slam Dunk and Paranoia Agent, but I'll spare everyone another wall of text
